For these kid-friendly energy bites, I make homemade macadamia butter from unsprayed Maui grown mac nuts. 

Note: you can substitute your favorite kind of nut butter for the macadamia butter, such as peanut butter for a comfort food version, or sunflower seed butter for a nut-free version. 

Ingredients

  • 1 cup almond flour
  • ½ cup gluten-free oats
  • ½ cup macadamia butter
  • 1/4 cup ChocZero keto honey 
  • If nut butter is unsalted, add 2 pinches of sea salt

Toppings

  • Melted sugar-free chocolate
  • Unsweetened coconut
  • Crushed macadamia nuts

Instructions

  1. Stir all ingredients together until a thick dough forms.
  2. Roll into about 10 bite-sized balls.
  3. Top with melted chocolate, coconut, or crushed macadamias.
  4. Refrigerate until firm.
