Rich dark chocolate, bold espresso, silky coconut cream, and a subtle caramel finish come together in this decadent mousse that feels like something you’d order at a fine restaurant—without the sugar spike.
1¼ cups coconut cream solids (chilled overnight)
1/4 cup raw cacao powder or Dutch-process cocoa powder
Pinch of sea salt
2 tsp vanilla extract
3 scoops Wholesome Wellness Multi Collagen Protein (21 g collagen protein), or collagen protein powder of choice
1 tbsp melted cacao butter (about 5 wafers), optional, for truffle-like richness
2 tbsp ChocZero Caramel Sauce
1 tsp espresso powder
Optional garnish: whipped cream, a drizzle of ChocZero Caramel Sauce, and a light dusting of cacao powder
Place the chilled coconut cream solids in a mixing bowl. Using a hand mixer, whip for 30–60 seconds until light and fluffy.
Add the cacao powder, espresso powder, and sea salt. Mix until fully incorporated.
Slowly add the collagen powder while mixing to prevent clumping.
Add the vanilla extract and melted cacao butter, if using. Continue mixing until smooth, creamy, and glossy.
Add the caramel sauce and gently fold it in, leaving a few caramel ribbons throughout the mousse.
Taste and adjust if desired. A small pinch of sea salt will intensify the chocolate flavor, while a drizzle of additional caramel sauce will create a sweeter finish.
Transfer to serving dishes and refrigerate for 20–30 minutes, or until thick and mousse-like.
Serve as is, or top with whipped cream, a drizzle of caramel sauce, and a light dusting of cacao powder before serving.
